Do you know AGEs (advanced glycation end products)?
These AGEs are produced by the phenomenon of saccharification.
Glycation is a chemical reaction in which sugars such as glucose stick to proteins and lipids when heated.
This glycation reaction also occurs in the human body.
For example, when you eat sugar-containing foods in your diet, they are digested and absorbed, and the glucose concentration in your blood rises. When the glucose (blood sugar) is warmed by body temperature, a glycation reaction that binds to proteins and lipids in the body occurs. However, this does not mean that they will become AGEs immediately.
If this saccharification progresses further, it will become advanced glycation end products, AGEs, which are difficult to decompose.
AGEs are closely related to dementia.
AGEs cause not only diabetes but also osteoporosis, and when they accumulate in the crystalline lens of the eye, they also contribute to cataracts. When it accumulates in the collagen of the skin, the skin loses elasticity and becomes wrinkled.
It is known that high blood AGEs are prone to periodontal disease.
Accumulation in blood vessels contributes to arteriosclerosis.
In other words, the accumulation of these AGEs in the body is the cause of aging. Once formed in the body, AGEs are quite difficult to eliminate, which means reducing the amount of sugar in the diet as much as possible. This leads to prevention of aging and dementia.
